Grilled Chiken with mango herb salsa

this is summer time and mangoes are fruit of the season so why not use it for yummy salsa
so here is the recipe.
you can make this recipe with cottage cheese or tofu also

in case you don't get raw mango you can use ripe mango and add 1/2 tsp lemon rind to add the flavour.

INGREDIENTS
1/4 cup packed fresh parsley leaves
1/4 cup fresh mint leaves
3tsp olive oil, divided
2 tsp vinegar
2 cloves garlic
1/2 teaspoon red pepper flakes
juice of 1 lemon
½ raw mango, peeled, pitted and diced
Salt and ground black pepper
Chicken  breast slit into 2 
INSTRUCTIONS
Heat the grill to high.
In a food processor, combine the parsley,  mint, 2 tsp of the olive oil, the  vinegar, garlic, red pepper flakes, and the lemon  juice. Process until well chopped, scraping down the bowl as needed. Add the mango and pulse once or twice to combine and lightly chop. Season with salt and pepper, then set aside.
Rub the chicken steaks on all sides with the remaining 1 tsp olive oil, then season them with salt and pepper. Grill the steaks for 2 to 3 minutes per side for medium-rare.
Serve topped with the salsa.
